Brown Ginger Delight
which is delicious gluten-free and lactose-free gingerbread :D
Ingredients:
- 113 g lakctosefree margarine
- 100 g Muscovado sugar
- 200 ml of molasses (I used honey, worked as well)
- 1 eggfree
- 1 teaspoon vanilla extract
- 100 g peanut flour
- 150 g Shar mix C flour (gluten-free)
- 1,5 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1 teaspoon of ground ginger
- 1 teaspoon of ground cloves (full cloves)
- 1 tablespoon of cocoa
- 3 pcs of cardamon (full pieces)
- 3/4 teaspoon of salt
- 235 ml of boiling water
- Preheat oven to 175 C, and prepare baking pan with baking paper.
- Combine room temperature margarine with Muscovado sugar in the large bowl, make it creamy.
- Add molasses (or honey) and stir it well.
- Add egg-free, Vanilla, stir it well.
- Preheat pan and warm up spices, best if you have them not grounded, warm it up, and then blend it in the blender until you get powder.
- In separate bowl combine dry ingredients: flours, baking soda, spices mix and salt.
- Gradually add dry mix into the wet ingredients. Stir it well.
- Gradually and carefully add boiling water, until all ingredients are smooth and well-combined.
- Pour dough into the baking pan and bake for 40 min, or until the tooth stick is dry when insert.
